『陳協和』這是冠了姓的工廠名字哦！不是人名哦！「老」「老」老闆說：『因為將他看作是家人的一部分，所以就冠了陳家的姓給他。』走過將近一甲子的歲月，傳承至今已是第三代經營了，陳協和碾米工廠靜靜地靠在台東縣池上鄉境內海岸山脈的山腳下，地處池上鄉池上米精華區萬安村的中心地帶。雖然是老字號的在地碾米廠，確跟的上現代化的腳步，從木造碾米設備、麻布袋至現今全廠更換電腦化精米設備及稻穀冷藏設備。

近年又藉由行政院農業委員會農糧署輔導成立了『陳協和池上好米產銷專業區』邀請全國米質競賽第一屆總冠軍邱垂昌、第二屆總冠軍林龍星、第三屆總冠軍林龍山，擔任專業區輔導員，積極的投入農民的教育訓練、觀摩、米質評比、農地地力維護、農藥殘留檢測、更參與萬安社區生態社區營造的行列、98年初又通過台灣優良農產品CAS工廠驗證(產品編號042101耘禾)。期望能達到維護生態環境、提高農民耕作技術、藉由宅配更將健康好吃的米分享給大家。

煮飯的要訣 (How to cook)：

洗米：動作要輕、快，二分鐘內要完成2至3次的換水最後確實將洗米水瀝乾。

加水：比例要正確，一杯米加一杯水，依此比類推即可 (口感軟硬可自行調整加水比例)。

水質要佳：最好用處理過的水。

浸泡：白米在煮前最好用水浸泡20分鐘，軟化米質。

悶飯：煮好飯後利用餘溫悶15~20分鐘才能掀鍋蓋，以確保口感。

打鬆飯粒：悶飯後需打鬆飯粒，以避免飯粒結塊。

回冷：鋪上乾淨毛巾於鍋口上，稍加以吸收飯鍋的蒸氣，回冷的飯風味更佳。

飯的保存：1. 如需保存於電子鍋時以不超過10小時宜。2. 使用保鮮膜包裝冰於冰箱冷藏，食用時再加熱。
